Yeah, I really want to try Koopa Cape. It seems really fun, navigating the water section. It kinda reminds me of an underwater level from Crash Team Racing on the Playstation. 
I like the version 3 music (when you're inside the tube underwater).

Srsly, almost all the tracks fall nothing short of spectacular!! They're great!!
Bowser's Castle is the best Bowser stage EVER!
Rainbow Road... simply amazing and even more amazing actually playing it than watching a vid of it.
Maple Treeway is great!
I can see why people love Koopa Cape!!!
Daisy Circuit is pretty good.
Grumble Volcano is pretty neat, somewhat challenging at first.
Moonview Highway is REALLY good, imo, compared to other car/city stages in past Mario Karts. Best one yet.
Overall, MKWii's stages are the best-in-series!!
